Yorkshire Dales Meat Company describes ‘the perfect sausage' for British Sausage Week

 

Yorkshire Dales Meat Companysells enough sausage in one year to stretch the three miles from Leeds' Headingley cricket ground to the Royal Armouries.

Yorkshire Dales Meat Company supplies hotels, restaurants, caterers and event venues across the North of England with a wide range of sausages.

Its sausage varieties include traditional pork, wild boar, black pudding, chilli, Swaledale rings, venison, beef, game and more.

And, as part of British Sausage Week 2014, running November 3 - 9, the Wensleydale-based catering butcher has described what makes the perfect traditional pork sausage.

James Knox, Financial Director of Yorkshire Dales Meat Company, says: "It might be a bit misleading to say ‘the perfect sausage', as it's such a subjective thing, but we're very happy with ours.

"For our traditional pork sausage, we use a juicy mix of 75% locally sourced meat (pork shoulder and pork belly) and our own long-held secret recipe.

"The sausages are then filled nice and tight into natural pork or lamb skins and hung to absorb the flavours."

"It's a tried and tested formula, and we know it goes down very well with chefs and their customers across the North of England."

Yorkshire Dales Meat Company saw sales of its sausages and burgers rocket by 150% during the Tour de France, such were their popularity among chefs and their customers.

And, earlier this year, Yorkshire Dales Meat Company outshone its catering butcher competitors in a public vote for the best sausage at The Camp Hill Estate Beer and Sausage Festival.
