Recapture the summer with Hawaiian Tacos by KANKUN®

Follow this delicious recipe to enjoy your own Mexican Luau‎:

Ingredients

500g pack lean pork mince
300g of chopped pineapple
2 tsp vegetable oil
1 red onion chopped
2 tsp each mixed herbs and ground pepper
400g tin of chopped tomatoes
400g tin of black beans
Small bunch coriander chopped
8 corn tortillas
1 ripe avocado peeled and sliced
½ iceberg lettuce finely shredded
Soured cream to serve (optional)
6 tbsp KANKUN® CHIPOTLE SAUCE

Method:

  1. Heat the oil in frying pan, add the onion, and cook for 5 minutes until softened

  2. Sprinkle over the spices and cook for a further minute

  3. Add the mince breaking it up and stir until cooked

  4. Add the chopped tomatoes into the pan. Increase the heat and allow the sauce to bubble and reduce until it clings to the meat. Add the beans and the pineapple and cook for a further 2 minutes, finally stir in the coriander

  5. Add KANKUN® CHIPOTLE SAUCE and stir

  6. Heat the tacos following pack instructions

  7. Use the pork and bean mix to fill the tacos

  8. Top with slices of avocado, shredded iceberg lettuce and a dollop of soured cream (optional)
