KANKUN®sauce infuses signature dish at top London restaurant

KANKUN® CHIPOTLE HOT sauce is to be used in the signature Chicken Tinga dish at one of London's most popular Mexican restaurants, Lupita East.

KANKUN® is a family business founded in 2012 by Rolando Cardenas, to support the fashionable Mexican culture with authentic Mexican flavours and to liven up the taste of meals without harmful additives.

Chicken Tinga is an authentic Mexican recipe that consists of a generous amount of onion, scented herbs, shredded chicken and Chile Chipotle. The dish is then served with slices of avocado and a considerable helping of KANKUN® CHIPOTLE HOT.

Rolando Cardenas, founder of KANKUN®, stated, "ChickenTinga is family favourite of mine, so when one of the top Mexican restaurants in London wanted to use our sauce in it was a great honour. We are seeing a huge rise in the popularity of Mexican cuisine in the UK. We love working with established and up and coming members of the Mexican food industry to create authentic dishes to give the British citizens a true taste of Mexico."

Marco Cuervo, executive chef at Lupita, developed the recipe for the Chicken Tinga with KANKUN® CHIPOTLE HOT. He says "I like the authenticity and flavour that KANKUN® CHIPOTLE HOT delivers. It is an excellent choice for this Chicken Tinga dish as the sauce combines Rolando's traditional family recipe along with my own family recipe."

Marco has a BA in Gastronomy from the Universidad Del Claustro de Sor Juana in Mexico City; prior to joining Luipta in 2011, he worked in many of London's well-known Mexican restaurants, such as Taqueria and Mercado Cantina.

At Lupita, Marco manages the daily operations in the kitchen, whilst being responsible for the food preparation in addition to being the driving creative force behind the development of the menu.

Lupita prides their selves on the authenticity of the menu. Using the appetizing and fresh ingredients, customers enjoy a range of tacos, tostadas, quesadillas and enchiladas to salads, soups and homemade tortilla chips. Lupita has also been voted one of the top five Mexican restaurants in London.

Rolando, the artist behind the sauce, learned the art of the perfect chilli mix by sneaking into the kitchen at family dinners and watching, tasting and smelling the age-old recipes at the heart of his family’s tradition. He soaked up the tricks and secrets of the sauces, then replicated them a thousand times until they were as good as those from his childhood.

 

Rolando’s sauces were first served at fiestas featuring luchadores, mariachis and the most kicking Mexican food in town. Friends would leave Rolando’s house begging to take home a dollop of his home made chilli sauce. It became so popular that Rolando decided to make it available to all by launching KANKUN® Sauce.
